Biscoff bites are a simple, delicious, and quick snack that can be made in about 15 minutes.

They are great for morning tea, afternoon tea, parties, a light dessert, or even for tail gaiting food.

You could even make this as a sweet appetizer.

What is Biscoff?

Lotus biscoff cookies are sweet crisp cookies. These cookies originate from Lembeke, in Belgium.

Biscoff cookies are made using spices to give a unique taste. Imagine a caramel flavored cookie with a hint of cinnamon and other delicious flavors.

You can buy biscoff in cookie form or in a spread form.

Biscoff spread has a texture similar to peanut butter.

You can use smooth or crunchy biscoff spread for this recipe.

If you use crunchy biscoff spread, it adds more texture to these bites.

Ingredients

  • Slivered almonds: If you want to make this nut free, you could substitute crushed biscoff biscuits.
  • Biscoff spread: smooth or crunchy
  • Rolled oats: Also known as old fashioned oats. Alternatively you could use quick oats.
  • Chocolate chips: Dark, milk, or white.

Instructions

This biscoff bites recipe makes 24 bite sized biscoff bites.

Step One: In a small frying pan over low to medium heat toast the almonds until they are golden brown. Shake and stir the almonds when they cook. This way it will ensure even coloring.

Once cooked, turn off heat and transfer to a plate or bowl. Allow to cool completely.

Don’t leave your cooked almonds in the hot pan as they will continue to cook even when the heat is off.

When they are completely cool, chop the almonds into small pieces.

Step Two: In a large mixing bowl, place the biscoff spread, rolled oats, chocolate chips, and cooled almonds. Mix until well combined.

Step Three: Take a spoonful of the mixture and press it into a ball using your hands.

If you find that it is not holding it’s shape, add a small amount of water to the mixture and mix through.

Place in fridge for at least 30 minutes or until the mixture becomes firmer. This will make it easier to handle the mixture when you shape it.

Step Four: Using a heaped tablespoon of mixture (about 21 grams, 0.74 ounces), shape it into 24 even sized balls.

Once shaped, serve or refrigerate until ready to serve.

Tips for Success

If you find your mixture is not sticking together, add a bit of water and mix it through.

Substitutions / Variations

  • Try adding some dates, chopped peanuts or other dried fruits.
  • Or even dipping the biscoff balls in melted chocolate and adding crushed biscoff biscuits or sprinkles.
  • You could even add some protein powder or a dash of vanilla extract.
  • For a nut free alternative, you could use crushed biscoff biscuits instead of almonds.

Serving Suggestions

These biscoff bites go great with a hot cup of tea or coffee.

Storage

Store these biscoff bites in an air tight container in the fridge for up to 7 days.

I recommend not stacking the biscoff bites on top of each other as they may stick together. If you want to stack them, place a piece of parchment paper between layers.

Freeze these biscoff bites for 1 to 2 months. To defrost, bring to room temperature naturally.

  • 250 grams (8.82 ounces) biscoff spread smooth or crunchy
  • 135 grams (4.76 ounces) rolled oats (old fashioned oats) or quick oats
  • 60 grams (2.11 ounces) chocolate chips dark, milk or white
