This raspberry compote is bursting full of flavor!

It’s sweet and tangy, and goes perfect on so many different things.

From chocolate cakes, to yoghurt, and even ice cream!

For this recipe, you can use either fresh raspberries or frozen raspberries.

What is a compote?

A compote is a sweet sauce which is made from fruit cooked. It is similar to jam, but not as thick and is typically less sweet.

A compote is a type of fruit condiment.

  • Raspberries: You can use fresh or frozen raspberries.
  • White sugar: You can use caster sugar, monk fruit sugar, etc.
  • Lemon or lime juice
  • Water

Instructions

This recipe for raspberry compote makes about 1 cup (200 grams, 7.05 ounces).

Step One: Place raspberries, sugar, lemon or lime juice, and water in a small pot. Over low to medium heat, bring to the boil. Stir occasionally. Frozen raspberries can take a bit longer to bring to the boil.

Step Two: Boil the mixture for about 5 minutes, stir the mixture so that it does not burn. If you find the mixture rises when you are boiling it, slightly reduce the heat and stir.

Step Three: Reduce the heat to low. Allow the mixture to simmer for about 10 minutes, and stir often. Turn off heat. The compote will thicken as it cools.

Step Four: Allow to cool completely before storing in a sterilised jar or glass container or serve warm.

Sterilise your jar by pouring boiling water over the outside and inside of the jar.

Tips for Success

To make it easier to clean your pot after use, soak it in warm or hot water.

Storage

This raspberry compote can be stored in an air tight container in the fridge for up to 7 days.

You can freeze this compote for up to 1 month. Store it in a zip lock bag.

FAQ

How to thicken raspberry compote?

This compote will thicken as it cools. Once cool, if it is still not thick enough for your liking, reheat the compote.

In a separate bowl, combine 1 teaspoon of water with ½ teaspoon of corn starch (cornflour).

Add the corn starch mixture to the raspberry compote and mix through. Then turn off the heat

  • 4 cups (400 grams, 14.11 ounces) raspberries fresh or frozen
  • 4 tablespoons white sugar or monkfruit sugar
  • 2 tablespoons lemon or lime juice
  • 4 tablespoons water

Instructions
