This recipe for strawberry compote makes about 1 cup (200 grams, 7.05 ounces).
Step One: If you are using fresh strawberries, wash and dry the strawberries. Then remove the green leaves and cut into smaller pieces. You can skip this step if you are using frozen strawberries which are already cut into pieces.
Step Two: Place strawberries, sugar, lemon or lime juice, and water in a small pot. Bring to a boil over medium heat. Stir occasionally. Frozen strawberries can take a bit longer to bring to the boil.
Step Three: Boil the mixture for about 5 minutes. Make sure you stir the mixture so that it does not burn. If you find the mixture rises when you are boiling it, slightly reduce the heat and stir.

Step Four: Reduce the heat to low. Allow the mixture to simmer for about 10 minutes and stir often. Turn off heat. The strawberry compote will thicken as it cools.
Step Five: Allow to cool completely before storing in a sterilised jar or glass container or serve warm. Sterilise your jar by pouring boiling water over the outside and inside of the jar.
Tips for Success
If you want your compote to be thicker, combine 1 to 1 ½ teaspoons of corn starch (corn flour) with cold water. Add the corn starch slurry to the compote mixture at the end and mix well.
