Chia Compote

Chia compote is a great way to add flavor to your food. Use this simple compote recipe on your pancakes, French toast, or even on porridge.

- 1 cups (200 grams, 7.05 ounces) raspberries fresh or frozen
- 1 cup (125 grams, 4.41 ounces) blueberries fresh or frozen
- 1 tablespoon Lemon or lime Juice
- 2 tablespoons (30 grams, 1.06 ounces) White Sugar
- 2 tablespoons Water
- 1 ½ teaspoons Chia Seeds or basil seeds
Place raspberries, blueberries, lemon or lime juice, sugar and water in a small pot. Over low to medium heat, bring to the boil. Stir occasionally. Frozen berries can take a bit longer to bring to the boil.
Boil the mixture for about 5 minutes, stir the mixture so that it does not burn. If you find the mixture rises when you are boiling it, slightly reduce the heat and stir.
Reduce the heat to low and then allow the mixture to simmer for about 10 minutes. Stir often. Turn off heat and mix through the chia seeds. (see note 1).
Allow to cool completely before storing in a sterilised jar or glass container or serve warm. (see note 2).
1. The compote will thicken as it cools.
2. Sterilise your jar by pouring boiling water over the outside and inside of the jar.
This recipe for chia compote makes about 1 ¼ cup (220 grams, 7.76 ounces).
You could use other berries, such as strawberries or blackberries.
