Ingredients
  

  • 75 grams (2.65 ounces) shallot or red onion roughly chopped
  • ½ teaspoon minced ginger
  • ½ teaspoon minced garlic
  • ¼ cup (60 grams, 2.12 ounces) lime juice (about 2 to 3 limes)
  • 1 teaspoons maple syrup or raw honey or to taste
  • 1 tablespoon (7 grams, 0.25 ounces) ground sumac
  • ½ teaspoon sea salt or to taste
  • 1 cup extra virgin olive oil

Instructions
 

  • Place all ingredients in a food processor. Blend all ingredients together until they are smooth. Taste for seasoning and adjust seasonings to your liking.
  • Remove from food processor and store in a jar with a lid or a glass jug.

Notes

This recipe makes 275 grams (9.70 ounces) of sumac dressing. This serves about 4 to 6 people. The ingredients can easily be adjusted to suit how many serves you need.
