Thai Basil Pesto Butter

This Thai basil pesto butter is perfect to toss with hot vegetables or pasta, top over grilled meats, such as fish, chicken, or steak. It’s even great to spread over a nice slice of bread.

- 2 cups (40 grams, 1.41 ounces) Thai basil leaves
- 1 teaspoon dark brown sugar or to taste
- ½ teaspoon minced garlic
- 1 ½ teaspoons sesame oil
- ¼ teaspoon red pepper flakes or 1 hot pepper chili, add more if you want a spicier pesto
- 2 tablespoons light flavored oil e.g. vegetable oil or extra virgin olive oil
- 1 teaspoons fish sauce or soy sauce, or to taste
- 2 tablespoons (30 grams, 1.06 ounces) peanuts
- 1 ½ teaspoon Lime juice or to taste
- 175 grams (6.17 ounces) butter softened and cubed
- Salt and pepper to taste
In a food processor, place all ingredients except for the butter. Pulse until the mixture is smooth and like a pesto consistency. If you find your pesto rising up the sides of your food processor, scrape down the sides with a spatula (when the machine is not on). Once the pesto is to the consistency of your liking, mix through the softened butter. Taste for seasoning and adjust salt if needed.
Shape the pesto butter into a log using plastic wrap. Alternatively, you could place the butter in a bowl and cover with plastic wrap. Refrigerate.
