- 1 large egg (about 60 grams, 2.12 ounces)
- 2 cups (310 grams, 10.94 ounces) fresh ricotta
- ¼ cup (20 grams, 0.71 ounces) parmesan cheese grated plus 2 tablespoons extra (15 grams, 0.53 ounces)
- ½ teaspoon oregano
- Pinch of salt
- Pinch of pepper
- 1 tablespoon extra virgin olive oil plus extra for greasing
Preheat the oven to 200°C (392°F). Grease a small oven safe baking dish (about 14 cm, 5.5 inches).
In a medium size mixing bowl, whisk the egg, then add the ricotta cheese, ¼ cup parmesan cheese, oregano, salt, and pepper. Mix until well combined.
Place mixture in the greased oven safe baking dish. Flatten the top and then sprinkle the remaining 2 tablespoons of parmesan cheese on top.
Place in oven and bake for about 20 to 30 minutes, or until the top is golden brown. Remove from the oven and drizzle the extra virgin olive oil on top. Serve warm or at room temperature.
