- 42 grams (1.48 ounces) slivered almonds
- 250 grams (8.82 ounces) biscoff spread smooth or crunchy
- 135 grams (4.76 ounces) rolled oats (old fashioned oats) or quick oats
- 60 grams (2.11 ounces) chocolate chips dark, milk or white
In a small frying pan over low to medium heat toast the almonds until they are golden brown. (see note 1). Once cooked, turn off heat and transfer to a plate or bowl. Allow to cool completely. (see note 2). When they are completely cool, chop the almonds into small pieces. In a large mixing bowl, place the biscoff spread, rolled oats, chocolate chips, and cooled almonds. Mix until well combined.
Take a spoonful of the mixture and press it into a ball using your hands. If you find that it is not holding it’s shape, add a small amount of water to the mixture and mix through. Place in fridge for at least 30 minutes or until the mixture becomes firmer. (see note 3). Using a heaped tablespoon of mixture (about 21 grams, 0.74 ounces) shape it into 24 even sized balls. Once shaped, serve or refrigerate until ready to serve.
- Shake and stir the almonds when they cook. This way it will ensure even coloring.
- Don’t leave your cooked almonds in the hot pan as they will continue to cook even when the heat is off.
- This will make it easier to handle the mixture when you shape it.
Use crushed biscoff biscuits instead of nuts for a nut free alternative.
