- 2 tablespoons extra virgin olive oil or neutral flavored oil
- 28 grams (1 ounce) butter
- 200 grams (7 ounces) brown onion, roughly chopped
- 100 grams (3.52 ounces) carrot, diced
- 50 grams (1.76 ounces) celery, roughly chopped
- 450 grams (1 pound) ground turkey
- 1 teaspoon (1-2 cloves) minced garlic
- 3 cups (750ml/grams, 26.46 ounces) of chicken stock, vegetable stock, or water
- 400 grams (14 ounces) canned diced tomatoes
- 100 grams (3.52 ounces) potato, diced into small cubes
- 1 tablespoon dried Italian herbs or dried parsley
- 100 grams (3.52 ounces) cauliflower, roughly chopped into small pieces
- 1 teaspoon salt or to taste
- Pepper to taste
Heat oil and butter in a medium sized saucepan over medium heat. Once hot, add the roughly chopped onions, diced carrot, celery and ground turkey. Cook and stir for about 5 minutes, breaking the ground turkey into smaller pieces. Add the minced garlic and cook for about 1 minute more.
Add the stock, canned tomatoes, potatoes, and herbs. Bring liquid to the boil. Once at a boil reduce heat to low medium, cover with a lid and simmer for about 10 minutes.
Remove lid, turn up the heat and bring back to the boil. Add the cauliflower. Then reduce heat and simmer uncovered for about 5 minutes or until the cauliflower is cooked through. Season with salt and pepper to taste. Turn off heat and serve.
