  3. Add the stock, canned tomatoes, potatoes, and herbs. Bring liquid to the boil. Once at a boil reduce heat to low medium, cover with a lid and simmer for about 10 minutes.
  4. Remove lid, turn up the heat and bring back to the boil. Add the cauliflower. Then reduce heat and simmer uncovered for about 5 minutes or until the cauliflower is cooked through.
  5. Season with salt and pepper to taste. Turn off heat and serve.
