  • Red Bell Pepper: Stemmed, seeded, and finely diced.
  • Ground Turkey
  • Minced Garlic
  • Minced Ginger
  • Canned Chickpeas: Drained.
  • Chicken Stock, Vegetable Stock or Water
  • Bay Leaves
  • Worcestershire Sauce
  • Green Onions (Spring Onions): Finely chopped.
  • Salt and Pepper

Instructions

This recipe for ground turkey soup serves 4 as a main, or 4 to 6 when served as a side dish.

Step One: Heat oil in a medium sized saucepan over medium heat. Once hot, add the brown onion, red bell pepper, and ground turkey.

    • 2 tablespoons extra virgin olive oil or other neutral flavored oil
    • 200 grams (7 ounces) brown onion, roughly chopped
    • 1 medium (140 grams, 5 ounces) red bell pepper stemmed, seeded, and finely diced
    • 360 grams (12.70 ounces) ground turkey
    • 1 teaspoon minced garlic
    • 1 teaspoon minced ginger
    • 150 grams (5.30 ounces) canned chickpeas, drained
    • 4 ½ cups (1250ml/grams, 44 ounces) of chicken stock, vegetable stock, or water
    • 1– 2 bay leaves
