Instructions
If you are using fresh strawberries, wash and dry the strawberries. Then remove the green leaves and cut into smaller pieces. You can skip this step if you are using frozen strawberries which are already cut into pieces.
Place strawberries, sugar, lemon or lime juice, and water in a small pot. Bring to a boil over medium heat. Stir occasionally (see note 1).
Boil the mixture for about 5 minutes, stir the mixture so that it does not burn (see note 2).
Reduce the heat to low. Allow the mixture to simmer for about 10 minutes and stir often. Turn off heat. The compote will thicken as it cools.
Allow to cool completely before storing in a sealed glass jar or glass container or serve warm.
Notes
Frozen strawberries can take a bit longer to bring to the boil.
If you find the mixture rises when you are boiling it, slightly reduce the heat and stir. To make it easier to clean your pot after use, soak it in warm or hot water.
This strawberry compote makes about 1 cup (200 grams, 7.05 ounces).
Sterilise your jar by pouring boiling water over the outside and inside of the jar.
If you want your compote to be thicker, combine 1 to 1 ½ teaspoons of corn starch (corn flour) with cold water. Add the corn starch slurry to the compote mixture at the end and mix well.
